Irmik, tuz, kimyon, karabiber, domates, biber salcasinin yarisi ilave edilir. Bulgur ve irmik iyice ozlesinceye kadar yogrulmaga devam edilir, sonra un ilave edilir ve arada azar azar ilik su ilave edilerek yogrulur.&lt;br /&gt;&lt;br /&gt;Karisim iyice ozlesip top haline gelmesi kolay hale gelince, koftenin hamurundan biraz koparilarak, iki elin ortasinda, dondurulerek cubuk haline getirilir. Bu uzun parcadan findik buyuklugunde koparilarak kucuk parcalara ayrilir. Kucuk parcalar avuc ortasinda top haline getirilir ve en sonunda ustune bastirilarak yassiltilir. Bu yassiltma esnasinda eger koftenin kenarlari parcalanmiyorsa karisim iyi ozlesmis demektir. Eger parcalanirsa, biraz daha yumayincaya kadar yogrulmaga devam edilir. Yassiltilan kofteler bir tepsiye dizilir ve uzerine un serpilerek yapismalari onlenir. Bir tencerede su tuz ilave edilerek kaynatilir. Kaynayan suya kofteler atilir, kofteler su yuzune cikmaga baslayinca kepce ile alinir. (Ben makarna tenceresinde pisiriyorum, pistiginden emin olunca ic tencereyi cikartinca suyu suzuluyor) Uzerine hemen soguk su gezdirip daha cok pismesi engellenir. Haslanan kofteler buyukce bir kaba konur, uzerine sosu dokulerek servis yapilir.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Sos'un hazirlanisi:&lt;br /&gt;&lt;/strong&gt;Kizdirilmis zeytinyagina salcalarin artani ve sarimsak ilave edilerek kavrulur, sonar limon suyu, biraz karabiber ve nane kurusu ilave edilip, karistirilir ve atesten indirilirek, hemen koftelerin uzerine gezdirilir. Kofteler sosla karistirildiktan sonra, dogranmis maydanozlar koftelerin ustune dokulerek suslenir.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Kucuk notlar:&lt;/strong&gt; Sarimsak sayisi, zeytin yagi miktari tamamen istege bagli. Cok sarimsakli sevenler daha cok, az sevenler ise daha az sarimsak koyabilirler. Sosu koftelerle karistirdiktan sonra, zeytin yagini biraz daha soguk olarak ilave edebilirsiniz. Her yemegi kendi olculerime gore yaptigim icin, tam miktarlari vermek zor oluyor.
